The perfect summer wedding appetizer: Dried Tomatoes
Dried Tomatoes are a typical Southern Italy product, very easy to prepare at home and easy to be served with pasta, fish, meat and cheese as well!
Choose tomatoes of a uniform size so they dry at the same rate, slice tomatoes in half, place on foil lined baking tray and bake at 200 degrees for 8-10 hours. Store in mason jar with olive oil.
If you prefer to prepare them as the tradition teaches: place on a raised screen, lightly sprinkle with salt and herbs, and place under the hot sun until dry.
Always remember that it takes around 1 kilo of fresh tomatoes to make 100 gr. of sun-dried tomatoes.
